Why? Because I love vegan cheesecakes and matcha. And I like coconut milk too. So I thought that I should combine them :)
The result? A coconut matcha cheesecake that's rich, delicious, easy to make and it's also quite cheap because I don't use cashews it this. And I'm not the only one who says that this cheesecake is delicious. I shared it with some friends who aren't vegan and they all loved it! A lot, even if they weren't matcha fans to begin with!
Also, this dessert it's quite healthy, but still quite high in calories :)
So I think you should at least give it a try! And if you want your cheesecake to be more vibrant green you should use white sugar. I prefer to use unrefined brown sugar, but this is me :)
Also, I love this cheesecake by itself or with a bunch of berries :)
