Lentil hot pockets (EN/RO)

Do you want something delicious, rich in protein, and that can be a rival for those nasty mince pies?
Then look no more! Ok, jokes aside (ok, not really jokes, but still), you have to try this hot pockets!
They are filled with lentils and veggies, delicious, satisfying and they can be a good idea for a holiday meal. And if you add a sauce you don't need anything else! Maybe just a salad to add some greens to your proteins to make it even healthier :)
But I really think that you can take this for your family holiday meal and everybody will like them! 
And you have another positive aspect: that they are really easy to transport, so if you don't want to make them for a special occasion, you can make them for a work or school lunch also! :)
Also, they are quite easy to make, don't be fooled by the length of the recipe. It's just explained in detail :)

Fluffy carrot cake (with a coconut frosting) (EN/RO)

I love cakes and breads made with vegetables, like carrot cake or zucchini bread because they are delicious and you get some veggies with your dessert too :)
And why shouldn't I love them? I make them quite healthy, full of nutrients and deliciousness. So I can nourish my body as well as my soul :)
And this is a recipe perfect for spring, because carrots are delicious, crunchy and fresh. And if you celebrate Easter, I believe that this recipe deserves a try!
And you can make a coconut frosting to top the cake if you want. Or you can eat it plain, or with some plant yogurt. Delicious!
Also, it's perfect for morning or for a breakfast or snack on the go if you bake it into mini loaves or muffins.

High protein vegan buttermilk waffles (sweet and savory) (EN-RO)

I wanted to buy a waffle maker for a long time now. And guess what? I finally got one almost 3 weeks ago. And since then I'm obsessed with waffles.
Seriously, I made waffles almost every day for the last 2 weeks! I absolutely love them!
And the fact that I can have them for breakfast or lunch or dinner, makes them amazing! And yes, you read it well... For lunch and dinner too!
As you may know, I love making savory versions of usually sweet stuff. Like waffles. I made a savory version of them too, to go well with roasted or sauteed veggies, savory sauces...
And this waffles, both sweet of savory, are high in protein, cheap, easy to make and delicious! Crispy on the outside, fluffy and soft on the inside... Delicious! And the vegan buttermilk gives them a really nice texture and taste :)

Apple - kiwi tarte tatin with a chickpea flour crust (EN-RO)

What are you doing when you want something sweet? In my case, I'm making something!
Why? Because I love to cook and I love to know what I put in my food. 
As usually, my desserts (and other foods) are quite easy to make and delicious!
This one is quite high in protein because of the chickpea flour, it's oil free and accidentally gluten free. It has some sugar, but it's a dessert in the end, so it's ok to treat yourself from time to time (or everyday if you want) :)
Also, it's quite cheap and easy to make. And if you don't have (or you don't want to use) kiwi fruits, you can use just apples. It's still gonna be really delicious!
Just try it, you don't have to believe me!

Easy puff pastry recipes for brunch or snack (sweet and savory versions) (EN and RO)



I don't know about you, but when I'm in a hurry and hungry I tend to eat pastries or pies (vegan of course) if I don't pack something from home because they're easy to eat and convenient.
So I thought... Why not make some at home? Even if they're not the healthiest dessert, they're still healthier than the ones you would buy in a regular pastry shop. And I love knowing what I have in them :)
Also, they're easy to make, quite cheap and come in two versions: savory and sweet. 
And they're great to make them one or two days before you need them, but the're not gonna be as crispy after 2 days... Also, you can make them smaller for a party or for a brunch, or bigger for a breakfast or a meal on the go.

Warming chunky split pea and lentil soup

Because even if the calendar says that it's Spring, the weather says that Winter needs more time here. And we need foods that are warming, and cozy.
Who says that global warming is a myth? We can feel it every day... Winter without snow, a Spring that starts later than usual and snow in April... And that's just a small part of what's happening. But we can change things (slowly, I agree). Go vegan today and save animals, yourself and the planet!
Yes, I care about these things and that's why I became vegan almost a year ago. And now I want to share what I know and what I create.
Like this soup. It's hearty, chunky (or you can make it creamy by blending it), easy to make and quite cheap.
Also, it's perfect for meal prep, so you have something tasty and satiating at work or when you come home :)
