If you want something fast but still tasty, then I'll recommend you this fried rice with tofu and green peas.
Bonus: it's cheap to make, gluten free, oil free while still tasting amazing!

** 400 g (2 cups) rice, cooked
** 200 g (1.5 cups) green peas (I use
frozen)
** 160 g (1 small block) tofu, not
pressed, cubed
** 150 g (1 cup) carrots, chopped
** 150 g (1.5 cups) celery, chopped
** 100 g (2/3 cups) corn (I use frozen)
** 3 tbsp soy sauce
** ¼ tsp tsp black pepper
** ¼ tsp chili powder or sriracha
** 1 tsp garlic powder
** ½ tsp turmeric, ground
** Water for cooking
Method:
Chop all your veggies, drain the tofu
and cut it into cubes.
Add some water to a pan and add the
onions first. Let them saute for a bit until they start to soften.
Add the spices, tofu and carrots. Cook until the carrots start to
soften, adding water if needed.
Add the peppers and the celery. Cook
for 2-3 minutes. Add the peas and the corn. Stir until everything is
combined.
Add the rice, stir and cook until the
rice is all heated.
