Two beans and walnuts loaf

So... How do I have the time to work so many hours every week and cook healthy vegan food? Always do at least a minimal meal prep. So this is the bare minimum that I make every week:
I boil all my beans, quinoa, lentils and/ or rice for the week. If you want, you can freeze some beans and thaw them and use them when you need to.
Peel and clean some vegetables, not a lot of fancy stuff, just your favorite vegetables/ your staples.
And you have some basic stuff for the week to come.
I can make a chili in less than an hour with this things. Or burgers. Or whatever you need :)
And now, a recipe. Because this is a food blog :)

Two beans and walnuts loaf

Ingredients (makes 1 loaf):
180 g beans of your choice (red, pinto, black – all of them, or only one type) (1 cup)
170 g chickpeas (1 cup)
120 g rolled oats (1.5 cups) *
150 g carrots, grated (1.5 cups)
150 g spring onions, chopped (1.5 cups)
100 g chopped walnuts (1 cup)
3 tbsp tomato paste **
1.5 tsp garlic powder
½ tsp salt
1 tsp sage
1 tsp basil
1 tsp thyme
1 tsp ground coriander
½ tsp cumin
2 tsp smoky paprika
¼ tsp black pepper
¼ tsp chili powder ***
½ tsp allspice
1 flax egg (1 tbsp flax meal + 3 tbsp water)


Method:
In a food processor or blender, add the oats and blend until you make a coarse flour.
After your flour is ready, add the rest of the ingredients and blend until a little chunky.
You can let it rest in the fridge for at least half an hour, but this step is not mandatory.
Line a baking dish with parchment paper and put that mixture in. Press it down enough to be even. Bake the loaf for 60 minutes on medium heat. You can make a glaze with tomato paste, garlic, pepper and other spices that you like. If you want to glaze your loaf, then take it out after 30 minutes and spread that glaze on top of your loaf. Bake for another 30 minutes. Take it out and let it cool. Enjoy!


*I prefer to use half of the oats made into flour and half just like that. It helps a lot with the consistency.
**You can substitute tomato paste with ketchup, barbecue sauce (make sure it doesn’t have any animal products in it, though).
***If you love spicy foods you can add more chili powder
You can let the walnuts out if you don't like them or you don't have them on hand and it will still be delicious.
