High iron pancakes. Baby friendly recipe




Ingredients (1 adult serving or multiple baby servings):
* 40 g (1/3 cup) rolled oats
* 20 g (2 tbsp) hemp seeds
* 10 g (1 tbsp) flax seeds
* 1 pinch baking powder
* 185 - 250 ml (3/4 to 1 cup) soy milk
* optional: 1 tbsp peanut butter, mashed banana

Blend all the ingredients together until you have a batter thick enough. I like to use around 3/4 cup milk so the batter is a bit thicker. Let it sit for 5 to 10 minutes to thicken, then cook the pancakes in a skillet over low to medium heat (you can use some oil for cooking if you want).
For babies and toddlers make mini pancakes.
You'll have around 16 to 20 mini pancakes, depending on how big you make them.
My little one eats 1 or 2 at a time, but your little one may eat less or more, depending on how hungry they are, how much they usually eat or how much they like the taste and texture.

Strawberry pancakes

Yes, I have yet another pancake recipe. Why? Because I like pancakes and they are tasty, fluffy, easy to make and a little bit different than the usual recipes but still very delicious!
Also, they're sugar free, oil free and accidentally gluten free because of the oats.
I really love making pancakes every day if I have the time (unfortunately, I don't).

Oat and chickpea savory pancakes

Because I'm on a pancake kick right now, I wanted to create a savory pancake recipe too, for those who still want pancakes but are tired with the traditional ones.
Also, these are gluten free, oil free and quite high in protein also! So you check a lot of boxes with just one meal :)
You can have these with your favorite gravy or savory sauce. I prefer to eat them with a tahini and miso sauce or a peanut and miso sauce. And if it's a late meal maybe I add some tofu too :)

Coconut and rice flour pancakes

For some time now I started experimenting with gluten free recipes, because I know some close people that are gluten intolerant and I love cooking for friends and family.
And I like sharing my recipes too! But you already know that :)
It occurred to me (with the help of my husband 😊) that I didn't post breakfast recipe for some time now, so here it comes.
This time I made some coconut and rice flour pancakes.

Pumpkin chickpea pancakes

Because the fall means pumpkin for me (you already know this if you saw my last post) I love cooking and experimenting with pumpkin.
I also love chickpea flour. And for a high protein, oil free and healthy breakfast I made these pancakes one day when I had some freshly made pumpkin puree and a need for something different :)
They are fluffy, really tasty and perfect for fall due to the pumpkin and the warming spices :)

Coconut and chickpea flour pancakes

Who wants some pancakes that are delicious and healthy? I know that I want them!
Maybe you know that I'm in love with two types of flour: coconut and chickpea. I combined them and I made some coconut and chickpea flour pancakes.
They're still fluffy, hearty and really delicious!
You have to keep in mind that the combination of chickpea and coconut flour (at least the ones I have) creates a pancake that is quite fragile if you want to make them big. The solution? Make them smaller and funnier :)
Ok, let's go to the recipe now :)


Ingredients (2 servings):
70 g (2/3 cup) chickpea flour
55 g (½ cup) coconut flour
480 ml (2 cups) plant milk
30 g (2 tbsp) brown sugar
10 g (1 tbsp) ground chia seeds
5 g (1 tsp) baking powder
5 ml (1 tsp) vanilla extract


Method:
Mix the dry ingredients then add all the wet ingredients.
Mix until you have thick batter. Let everything sit for about 10-15 minutes.
Heat a nonstick pan (even lightly oil it) an make pancakes Cook them for about 3-4 minutes on medium-low heat then flip them and cook them for about 1-2 minutes.

Applesauce and oats pancakes (with a bonus recipe :) )

Ingredients:

250 g regular or instant oats (with 200 g make oat flour - you can use a regular food processor or a high speed blender, just make sure that you have a fine flour -  and the rest of 50 g let it like that for texture)
250 g applesauce (preferably unsweetened)
200 ml oat or soy milk
30 g brown sugar
10 g baking powder
3 g cinnamon
1 pinch of salt
