Tahini biscuits (EN/ RO)

Biscuits and gravy is not really a thing in my country, but I've heard so much about this combo and about biscuits and gravy in general! 
And the fact that they always look so fluffy and flaky made me want to try them. 
I've researched a bit about the difference between biscuits and scones (I found out that no, they're not the same thing) and I started to develop a recipe for myself. Using tahini, because I love it and whole wheat flour for added nutrition. 
And guys, they are so delicious! Fluffy and flaky and they have and amazing depth of flavor, with a bit of bitterness because of the tahini too! They are amazing with a bit of vegan butter and some jam, nut butter, fruits, gravy... Your choice. 
Just try them for yourself, because you don't have to take my word :)

Plum galette (EN/ RO)


I found some sweet and juicy fall plums and I was so happy and giddy about them! And why? Because I love plums and I love cooking with them too! 
This plum galette is easy to make, delicious and has no refined oil. Just healthy fats from the nut butter. And the plums are so soft and delicious after baking, almost like a jam that make a really nice contrast with the crumbly crust. 
You have to try it if you find some plums!

Baked apple fritters (EN/ RO)

What do you do when you have a bunch of apples? Because, as much as I love eating them raw, I love cooking with them too, especially dessert recipes, like pies, tarts and apple fritters. And lately not only I cannot have very sweet foods, but I cannot tolerate fried foods either (my baby wants a healthy mother, apparently). So I have to dry fry, or cook in water or I have to bake stuff or I'm gonna be in severe pain from my stomach... That's why I made these baked apple fritters that are not only delicious, but oil free and refined sugar free (I use unrefined sugar, because I love it and it's a tad healthier too). They don't have a ton of ingredients and those that I use are quite common for most kitchens. So with a few pretty common ingredients you can make some easy and very delicious snack/ dessert type food. And you have to try them, because they deserve some love and recognition :)

Tofu and veggies curry

Here, in Romania, it's still winter and cold and all I want is to stay indoors and cook and eat good food :)
This curry recipe is warming, tasty and perfect for the cold season!
Also, is oil free, gluten free, cheap, easy and made in only one pot. It hits the spot every time!
Also, this recipe is perfect for meal prep, as it keeps in the fridge for at least 3-4 days and it freezes well. So you can double or triple it and enjoy for a longer time!
You can add some chili powder if you want more spice :)

Two beans stir fry with a peanut sauce

To be honest, most of the time I'm in a hurry, and even if I love to cook, sometimes I want something that's ready in less than 30 minutes but still delicious, nutritious and quite healthy.
Bonus points if the recipe is cheap, oil free and asian inspired because I love those type of meals :)
This recipe is healthy, flavorful and perfect for any weather. The sauce gives a really nice flavor and creaminess and compliment the simplicity of the veggies...

Strawberry pancakes

Yes, I have yet another pancake recipe. Why? Because I like pancakes and they are tasty, fluffy, easy to make and a little bit different than the usual recipes but still very delicious!
Also, they're sugar free, oil free and accidentally gluten free because of the oats.
I really love making pancakes every day if I have the time (unfortunately, I don't).

Cranberry banana bread

I love fruit and veggie breads, and especially pumpkin and banana bread. As I already have a recipe for pumpkin bread here, I had to post one for banana bread too.
This recipe is inspired by Caitlin Shoemaker, but I changed it, because I like to customize every recipe that I try (or to develop them from scratch :)
For this bread I used some dried cranberries and cacao nibs, because I love this combo!
And the bread it's still fluffy, delicious but filing and quite healthy. Also, it's oil free and gluten free too. It's a must try!

Basic seitan burger

I usually like to make more creative recipes, but sometimes a good, basic seitan burger with beans is perfect and it tastes amazing, even if it doesn't have beets or Gods know what my mind creates in the moment...
This burger recipe is tasty, easy to make and you can make it using a grater if you don't want to use a food processor.
They are also high in protein, flavorful, satisfying and oil free :)
The secret is in the spices, guys! You don't actually miss the meat, but the texture and the spice combo. You can always have the feeling if you want, just choose the right (cruelty free) ingredients :)

Fudgy guilt free chickpea brownies

What can be better than a dessert that is in the same time tasty, decadent, healthy and guilt free?
With these brownies you eat your dessert and a healthy portion or your legumes in the same time😊
They are also oil free for added goodness 😊
I know that usual people use black beans for brownies, but I LOVE chickpeas, and I couldn't let them out from my desserts either.
You cannot taste the chickpeas at all, and these brownies are really fudgy, decadent, moist and they hit the spot when you want something sweet.

Fluffy pumpkin bread (EN/ RO)

It's the pumpkin season!
Ok, this season comes with some annoying things too, like cold weather, rain, end of summer... But guys, PUMPKIN! and apples, and baking!
Here is already pretty cold, but now I have an excuse to use my oven and bake some things :)
Like pumpkin bread!
This version is fluffy but still moist, oil free and refined sugar free.
I used peanut butter as my fat and unrefined brown sugar as sweetener.
It's perfect for breakfast, desert or as a snack, with some nut or seed butter... Yum!

Applesauce and oats pancakes (with a bonus recipe :) )

Ingredients:

250 g regular or instant oats (with 200 g make oat flour - you can use a regular food processor or a high speed blender, just make sure that you have a fine flour -  and the rest of 50 g let it like that for texture)
250 g applesauce (preferably unsweetened)
200 ml oat or soy milk
30 g brown sugar
10 g baking powder
3 g cinnamon
1 pinch of salt
